been soo busy today out of the house all day doing my running around almost did not make it on here to do this post, here is my favorite pins this week.

recipe wednesday : orange chicken and vegetable stir fry

i found this recipe on the PBS website me and hubby love stir fry's and i am always looking for new ones. This one looks so good i really need to try and make this one.

here's the recipe :

Orange Chicken and Vegetable Stir-Fry

• Prep Time: 15 min(s)
 
• Cook Time: 10 min(s)
 
• Total Time: 25 min(s)
 
• Servings: 4-6

If you've always wanted to make your own Chinese restaurant food at home, this recipe is a great one to add to your collection. Enjoy!

Ingredients

• Sauce:

• 1/2 cup orange juice
• 2 tablespoons soy sauce
• 2 tablespoons rice vinegar
• 1 tablespoon oyster sauce
• 1 tablespoon orange zest
• 2 large cloves garlic
• 1 teaspoon minced ginger
• optional sweetener like sugar, honey, agave, etc.

• Stir-fry:

• 1 pound chicken tender cut into cubes
• salt and pepper
• 3 tablespoons corn starch
• 4 cups chopped vegetables such as broccoli, carrots, celery, mushroom, snap peas, etc.
• olive oil
• 1/2 cup medium yellow onion, chopped

Instructions

1. Blend all the ingredients for the sauce in a blender or food processor for 10 seconds.
2. Taste the sauce and add your choice of sweetener to your liking.
3. Blend again for a few more seconds.
4. Heat the sauce in a large skillet on medium-high heat for 5 minutes. Carefully transfer the sauce to a heat proof bowl.
5. Rinse the skillet clean.
6. Season the chicken with salt and pepper.
7. Add the corn starch and massage the chicken with your hands.
8. If using fresh broccoli or green beans, boil the broccoli for 3-5 minutes until soft enough to pierce with a fork yet firm.
9. Transfer the vegetables to a plate lined with a paper towel.
10. Wipe down the skillet until dry.
11. Heat approximately 1 tablespoon of oil in the skillet on medium-high heat.
12. Cook the onion and chicken until the chicken is cooked through, approximately 3-4 minutes.
13. Add the remaining vegetables and stir-fry them together for 2 minutes.
14. Slowly add a few tablespoons of sauce while stirring the vegetables and chicken.
15. Continue to add the sauce a few tablespoons at a time, allowing about 15 seconds between each addition to allow sauce to slightly cook down.
16. Spoon the stir-fry over a bowl of hot rice. Serve immediately.

the struggle with dieting and my weight loss journey

hello everyone

for years i have been battling my weight tried everything to loose it fallen off the wagon too many times to count but now i really have to try and get it done. at current i weigh 389 lbs shameful i know. So when i found this out i looked at myself and said i have to change its time to diet and this time stick to it no falling off the wagon. First thing i did i had a long discussion with my husband, now he is no skinny mini himself at 245 lbs i told him if i am changing we both have to change as he does most of the cooking he had to change the way he was cooking. Now don't get me wrong i love my husband and his cooking but he makes enough to feed an army he also cooks too much potatoes and rice and pasta and not enough vegetables. What have i been buying frozen vegetables for them to sit in the freezer ? So he agreed to change his cooking habits now every night we have vegetables and i feel better eating more healthy. second thing was to get myself to drink the recommend 8 glasses of water a day i had a very nice Rubbermaid water bottle i bought from target for bowling so why not use it every day it holds about 2 glasses of water maybe a bit more as it holds 20 oz. Now i really do hate the taste of water so i do add crystal light or other singles i know this adds calories but most are only 5 calories so its not so bad, i do drink the bottled water plain but it has to be real cold to drink it there is just something about the city water or warm or Luke cold water that just tastes nasty. Now a friend of mined who is also trying to loose weight recommended a website the other day as i guess you're supposed to keep track what you eat its called myfitnesspal its a great website i can track what i am eating and it shows how much calories i can consume a day and i can even track my exercise. Now i just got to work on my weaknesses not eating fast food ( this cant be avoided all the time but i think its okay as long as i check to make sure its a bit healthy or has healthy options), no chocolate or chips or other junk food (i will allow one cheat day a week), cut down on the pop ( i drink diet pop but still try to limit to 2 cans a day). Now i just got to find an exercise routine its hard in the winter as with ice and snow its not clear enough to go for walks so what can i do for exercise indoors ? I hope maybe to go swimming at least once a week oh how i wish i could afford a gym membership but that is not in the budget right now. all i can do is try and hope i am successful i will be successful i need to if i want that baby one day i just got to take this one day at a time, anyone else been on that weight loss journey ?

the frustrations of computers especially involving aware etc...

hello everyone

as you know i love my contests/freebies but for the past month or more i was not able to could not figure out why when using rafflecopter or any other widget the links to like Facebook or follow twitter they would not be there. Then when entering contests or requesting freebies on Facebook they would not load or i could not submit even to log into websites with Facebook it would not let me  it was driving me nuts i wanted to throw the computer off the balcony.

now i had been having issues for a while with my search engine i had it set to Google but for some reason it kept going to this snap. do search engine. For the life of me i could not remove it only when i started having this problem with entering contest/freebies i noticed maybe this search engine may be the cause again i tried to remove it with my settings with no luck. Finally with some searching on Google i found this website that told me how to remove it thank goodness now it took a few steps including downloading an ad ware removal program but i finally have it back i'm so happy i really thought i would had to bring it in to a computer shop and fork out $100 plus to get it fixed now i'm doing my happy dance.
