recipe wednesday : no bake chocolate cheesecake


hello everyone

cheesecake has always been one of my favorite deserts especially chocolate cheesecake the chocolatier the better. so found this no bake chocolate cheese cake and all i could do is wish i had some now. I personally have never made one but would love to try and i hope you do too.

here the recipe : 

No Bake Chocolate Cheesecake

Ingredients
Crust
  • 7 oz. crushed Biscoff cookies ( or graham crackers )
  • 4 Tbsp unsweetened cocoa powder
  • ¼ c butter, melted
Filling:
  • 2 pkg ( 16 oz. ) cream cheese, softened
  • 3¾ oz. or ¾ c powdered sugar
  • 1 tsp vanilla extract
  • 5¼ oz. bittersweet chocolate, chopped
  • 5¼ oz. semisweet chocolate chopped
  • 1 c + 1 Tbsp. ( ½ pint ) whipping cream
  • additional cocoa powder for dusting
  • candied lime peel for garnish ( optional )
Instructions
  1. In a medium mixing bowl, stir together cookie crumbs, cocoa powder and butter. Stir until all combined.
  2. Press firmly onto the bottom of a spring form pan. Set aside.
  3. In a large mixing bowl, beat cream cheese for 1 minute, until smooth. Add powdered sugar and beat again. Add vanilla extract and mix again.
  4. Melt chocolate over a double boiler. Let cool slightly.
  5. With your mixer on slow speed, add the chocolate, pouring slowly.
  6. Whip the cream until stiff peaks form. Fold in gently to chocolate and cheese mixture.
  7. Pour the filling over the crust.
  8. Refrigerate for at least 8 hours, preferably overnight.
  9. When the cheesecake is set, run a sharp knife around the edge to loosen from the pan.
  10. Gently open the latch and release the cheesecake.
  11. Before serving, dust with cocoa powder and garnish.
Notes
Dessert should chill at least 8 hours or overnight
