recipe wednesday : healthy sweet and sour chicken


hello everyone 

i found this great recipe this week from  keyingredient.com i'm dying to try this sweet and sour chicken looks so good  and so easy to make and very healthy a must try in my books
here the recipe

Healthier Sweet and Sour Chicken

Ingredients

3 tbsp sugar
1½ tbsp corn starch
⅛-¼ cup water
about ⅓ cup pineapple juice (the juice of one 8½ ounce can of pineapples)
2 tablespoons soy sauce
1 cup corn starch
1large egg
½ cup canola oil, for frying the chicken
salt and pepper
6 tablespoons ketchup
1 teaspoon apple cider vinegar
1¼ pounds chicken tenderloin, cubed

Directions

Scramble the egg in a medium bowl.
Dip the chicken into the bowl.
Add the corn starch to another bowl and season with a pinch of salt and pepper; dip the chicken in the corn starch after dipping it in the egg.
Fry in the canola oil until golden.
Combine the rest of the ingredients in a sauce pan (sugar, water, pineapple juice, soy sauce, egg, apple cider vinegar, and ketchup). Simmer until it slightly thickens.
Bake the chicken in the oven at 350 in a covered casserole dish for about 40 minutes. Then remove from the oven and pour the sauce on top. Put back in the oven uncovered for about 15 more minutes.

i found this great recipe from Mrs January have not yet to try it out but looks so yummy i will update this post when i do cook it here is the recipe

Slow Cooker Chicken Teriyaki

Servings: 4

Ingredients:

  • 4 Boneless, Skinless Chicken Breasts
  • 1/3 Cup Soy Sauce
  • 3 Garlic Cloves, Minced
  • 3 Tablespoons White Vinegar
  • 1/3 Cup White Sugar
  • 1/2 Teaspoon Ground Ginger
  • 1/4 Teaspoon Black Pepper
  • 1/8 Teaspoon Salt
  • 3 Teaspoons Water
  • 3 Teaspoons Cornstarch
  • Bunch of Green Onions (Optional)

Instructions:

  1. Add all ingredients, except green onions, water and cornstarch, to your slow cooker. Cover and cook on low for 3-4 hours.
  2. Once cooked, remove chicken to a large bowl or plate and shred completely.
  3. Dump sauce left in the slow cooker into a small pot and bring to a boil. While sauce is reaching a boil, mix together cornstarch and water. Add this mixture to the sauce once it has started to boil.
  4. Mix well, and continue mixing until sauce has thickened, about 4-5 minutes.
  5. Drizzle sauce over chicken and serve over rice or quinoa.
  6. Top with green onions, if desired.
